Vegetarian Panaeng Curry Paste


Vegetarian Panaeng Curry Paste for quantity 2/5 cup:

Ingredients:


  • 5 dried red spur chilies, seeded and soaked until tender
  • 1 teaspoon sea salt
  • 1 teaspoon mature galangal, finely sliced
  • 1 teaspoon lemongrass, sliced
  • 1/2 tablespoon kaffir lime rind, finely sliced.
  • 1 teaspoon coriander root, finely sliced
  • 10 cloves garlic, sliced
  • 1/3 cup shallot, sliced
  • 1/2 teaspoon pepper
  • 1 teaspoon soy bean paste

How to cook:


  1. Finely pound dried chilies and salt together.
  2. Add galangal, lemongrass, kaffir lime rind and coriander root.
  3. Pound well. Add garlic, shallot, pepper and vegetarian bean paste.
  4. Pound to a fine paste and set aside.
You can keep in refrigeration for using 1 month.
