Stir-fired Mushroom with Holy Basil


Stir-fired Eryngii Mushroom with Holy Basil or Phad Gaphrao Hed

You can use any mushroom such as eryngii mushroom, straw mushroom, oyster mushroom, Shitake mushroom, or Chinese mushroom.  In this recipe, we use eryngii mushroom.


Ingredients
  • 250 grams Eryngii mushroom
  • 15 hot chilies
  • 5 large red hot chilies
  • 25 cloves small Thai garlic
  • 3 coriander roots, sliced
  • 1/4 teaspoon sea salt
  • 3 tablespoons vegetable oil
  • 2 tablespoons light soy sauce
  • 1/2 teaspoon sugar
  • 1 cup holy basil leaves
  • crisp-fried holy basil leaves for garnish

Preparation


1. Clean eryngii mushroom with a towel, cut into small cubes and put
aside.

2. Coarsely pound hot chilies, large hot chilies, garlic, coriander root and
salt. Put aside.

3. Preheat a pan with oil over medium heat. When the oil is hot, saute chili
mixture until fragrant. Add mushroom and stock and cook until done.
Season to taste with light soy sauce and sugar. Toss to combine. Add holy
basil leaves and continue cooking until fragrant.Turn off the heat.

4. Dip out into a serving dish and garnish with crisb—fried holy basil leaves
before serving.  Serve 2-3 persons.
